Woohoo! Cheers to our very first recipe for our food blog.
Per Arjun's request, we made monster cupcakes. No special instructions for the way we decorated the cupcakes - you can see what we did by looking at them and we used premade frosting. But enjoy our cupcake recipe below!
There is a special secret to making these cupcakes extra yummy. Instead of using milk, we added buttermilk, and it gave the cupcake flavor an extra kick!

INGREDIENTS
3/4 c room temperature butter
3 eggs, left at room temperature x 30-45 minutes
2.5 c all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 3/4 c sugar
1 1/2 tsp vanilla extract
1 1/4 c buttermilk
INSTRUCTIONS
First, preheat your oven to 375 degrees Fahrenheit.
Next, whisk the butter and sugar until the mixture is creamy. You should see air bubbles.
Then, add eggs one at a time and whisk the batter until it is light and fluffy. You will need to whisk it for a good 10 minutes for it to become fluffy.
At the end, add baking powder and soda.
Now, alternate addition portions of the buttermilk and flour, using the slow setting on the mixer. You don't want to destroy the great air bubbles that were created in the butter, egg and sugar mixture.
When you add buttermilk, add in vanilla extract.
Pour the batter into cupcake molds, and bake for 15 minutes.
Then, test the cupcake with a toothpick to see if it is done. If so, let it cool.
Frost and decorate to your heart's content. Feel free to use these pictures as inspiration for some scary monster cupcakes. :)
